I don’t think the mustard adds anything but it makes less mess. Sometimes I do it sometimes I don’t They just had them labeled as “back ribs”

Yeah the mustard gets the spice rub to stick but I don't feel it helps the spices penetrate the meat. It all kinda drips off in the cooking the same as if you used just a rub. Yeah they're deboned short ribs. Should come up lovely after 6hrs in the smoker!
