Yeast is not the only microbes used in fermentation though. Like yoghurts and cheeses for instance use different types of lactic acid bacteria. Kombucha uses both bacteria and yeast in a symbolic relationship, shitloads of different fermented drinks that are not alcoholic I could mention.
