What variety of chilli peppers do you use? Also I made some jalapeno honey and then separately made thyme and red onion honey then mixed it so I could control the heat. You might try that and tell me what you think. Next time I'll make them together and see what I like better.

This batch was made with a landrace from Kerala— medium heat but lots of flavor. You can definitely use any pepper and it would change the flavor profile. And yeah def adjust the amount of heat to your linking!

I have not actually tried with dried peppers but I have a large stockpile I have been wanting to try a test batch. I’d be glad to share some seeds btw, drop me a dm and let me know where to send em. 🤙
