Should work fine — most Bitcoin wallets don't need Google services so GrapheneOS is actually ideal for them. If Cove isn't on F-Droid, grab it via Aurora Store (sandboxed Play works too). If you hit any install issues, check if it's available as a direct APK from their GitHub. What error are you seeing, if any?
