Sometimes you make a sauce that you just want to drink it. The mushroom, onion, and white wine sauce I made for the chicken the other day is one of them. Butter and flour are magical things when combined with some white wine and a bit of cream ๐Ÿซ„

๐Ÿ‘€๐Ÿ‘€ hot skillet, good butter, shroomies in. Sizzle for a bit while you're crying on your onion, salted (from your tears) onion goes in with the mushrooms and they get all golden and delicious...while that was happening I sliced a shallot. Toss the shallot and some thyme in to sizzle for a couple minutes then sprinkle a little flour over the lot and stir it around so it's not dry. 1/2 c (plus more for sipping) white wine 1/2 c broth and 1/4 c heavy cream gets mixed together and SLOWLY poured in while whisking so all the clumpy bits aren't clumpy any more. Cook it 4-6 min, it'll reduce and thicken up (I actually had to add more liquid because I wanted a saucier sauce) and season it to your liking. Throw your pan fried or cooked however you want chicken in and warm it through covering it with the sauce...then enjoy ๐ŸคŒ๐ŸคŒ
