Gianduia (jahn-DOO-yah) is a traditional Italian confection from Turin, dating back to the early 19th century born when local chocolatiers began blending chocolate with the prized Piedmontese hazelnuts during a cocoa shortage. Nutella is actually its modern descendant (which became an awful product, as we know...). What I made here is a handcrafted gianduia bar made with hazelnuts caramelized in maple sugar and panela (from @Bitcoin Beans), then blended into a mix of coarse and fine pieces, folded into tempered 70% Mexican stone ground dark chocolate. The varied grind gives each bar a unique texture - part crunch, part melt - and the caramel adds a rich, natural sweetness that perfectly balances the dark chocolate. Hand-tempered, set, and cut individually, so no two bars are exactly alike! These things are DA BOMB. Low key proud of these.

What I do most often is take a mug of milk, and in a saucepan, I'll take a little milk and heat it up with shredded cacao until it's melted, then pour in the rest of the milk and heat it up again till it's steaming. Then I'll sweeten it with honey and add vanilla or nutmeg/cinnamon/cayenne depending on my mood. It's the best hot cocoa ever. You can also reduce the milk and blend it in a Vitamix, and you get this super thick foam on top. That's also great to do with Oshi's chocolate butter to make cold chocolate milk.
