Six months of slow fermentation and this kombucha has grown a thick, healthy pellicle, evidence of stable conditions and active microbial balance. A well formed SCOBY like this reflects ongoing cellulose production by acetic acid bacteria. No shortcuts, just time and biology.

This looks sublime. 🥹 I have my work cut out for me. Any suggestions on how to improve structure? Mine are currently too fibrous.

Fibrous? Post a pic. Mine are usually much thinner, just happened to leave it for ages. I had to use a carving knife to cut the top layer off it was such a big block.

Reflections make it difficult to see, this is the best I could do just now.
