Just dove down this rabbit hole myself yesterday. I decided I wanted to be up and running with my Meshtastic device sooner than later and with little headache, so I went and got myself a RAKwireless WisMesh Pocket v2 that was pre-assembled. (Bought from Rokland, if you're in the US.)
I decided to go with it as it has an OLED screen, GPS radio, rechargeable battery , and an external antenna with bluetooth. Possibly more than I'd ever need, but I'm excited to get it and try it out.

Now we just need a vpn app that intercepts all nostr centric traffic and relays it straight over any available mesh network, making all nostr apps work with this

Yes, the meshcore devices can go much farther than Bluetooth range and also have repeaters available with which to broadcast a signal even farther. Thanks to my local repeater, I'm able to contact a node 17 miles from my house.
That depends on what preset you select. On long fast, on meshtastic, it's only 1 KBPS, but on something like short fast, it can be something like 10 KBPS, and on short turbo it can be 20 KBPS.
Also, to address the channel utilization, telemetry has been disabled in the latest versions by default and you have to request it manually instead of it being sent out automatically.
